When eggs are stored in cold temperatures and taken out to room temperature, condensation occurs on the shell which promotes bacterial growth, making the eggs harmful for human consumption. Therefore, it is best to not refrigerate eggs unless you suspect a salmonella infection. If you suspect such an infection, refrigeration is recommended to prevent the infection from spreading to other eggs. Refrigeration kills harmful bacteria, while storing eggs at room temperature does not. Regardless of the storage method, eggs should not be kept for too long and should be consumed within a couple of days. It is essential to prioritize safe food handling practices and to be mindful of the risks associated with bacterial contamination when storing and handling eggs.
