Zucchini and Lemon Ricotta Flatbread Recipe

Broiled Zucchini:

  • 2 small zucchini, sliced into 1/2-inch pieces
  • 1 teaspoon grapeseed oil, or another high-heat vegetable oil
  • Salt & black pepper

  • Salt & black pepper
  • 1 whole grain premade flatbread
  • 1 tablespoon grated parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • Fresh parsley or basil, finely chopped

Broil The Zucchini:

  1. First, you need to adjust toaster oven cooking rack to the top position. This will make sure that the zucchini is fully broiled.
  2. Slice the zucchini into 1/2-inch thick rounds and toss them with oil, salt, and pepper.
  3. Place rounds in an even layer on a roasting pan and broil them fully for 3 to 4 minutes. Carefully remove the pan and flip the zucchini. Broil the other side until browned in spots, about 3 to 4 minutes more.

Make The Pizza:

  1. For the pizza, you need to adjust the toaster oven cooking rack to the bottom position and preheat to 400F on the Bake setting. Lightly oil a baking pan. This is a good way to ensure that the pizza will not burn but it will get a good broil on it.
  2. Zest the lemon. Mix the lemon zest with the ricotta and red pepper flakes. Taste the mixture and season with salt and black pepper until you like the taste of it.
  3. Next, you need to arrange the zucchini slices on the flatbread and dollop with ricotta mixture. Top with parmesan and mozzarella.
