Southern Sunshine Bars Recipe

Here are the ingredients that you will need in order to make these sunshine bars:

  • 1 stick Butter
  • 3/4 cup Sugar
  • 1/4 cup Light Brown Sugar
  • 1 Egg
  • 2 tsp Vanilla extract
  • 1/4 cup Oil
  • 1 1/2 cups Flour
  • 1 1/2 teaspoons Salt
  • 1/2 teaspoon Baking Powder
  • 1 cup Carrots
  • 2 oranges zested

Once Cool Orange drizzle

  • 2 oz Cream Cheese
  • ½ cup 10x
  • 1 Tablespoon orange juice
  • 1 orange zested

Here are the ingredients you need to make these sunshine bars:

First, you need to heat the oven to 350F. Then, grease a 8×8” square pan.

Then, in a medium bowl cream together the butter and sugars until the mixture is smooth. Then, add the egg and vanilla extract, whisking together until the mixture is consistent.

Now, add the oil and mix until the consistency is smooth. Now, add all of the flour, salt, cinnamon and baking powder, mixing until just combined. Once that mixture is smooth and without lumps, it’s time to add the citrus.

Now, add the carrots and orange zest and mix until everything is fully combined. Once the mixture is fully combined, it’s time to transfer the batter to the greased 8×8” pan and spread the mixture evenly in the pan. Then, bake the sunshine bars at 350 degrees Fahrenheit for 30 minutes, or until the top is a golden brown color.

Next, remove the pan from the oven and let it cool completely. In the meantime, prepare the orange drizzle. It’s important to wait until the mixture is cooling to make the drizzle, as if you prepare it too early, the flavor won’t be as strong.

Now, in a  separate bowl, mix all of the cream cheese and powdered sugar until the entire mixture is completely smooth. Then, you need to stir in orange juice and orange zest until combined. Then, drizzle the mixture atop the surface of bars and you are done! The sunshine in a baked cookie bar is complete!
