Southern Breakfast Casserole Recipe

  • 1 medium yellow onion, diced
  • 1 jalapeño, diced
  • 10 large eggs
  • 1 cup cottage cheese or 4 ounces cream cheese, at room temperature
  • ½ cup whole milk
  • ¼ cup crumbled cotija cheese
  • ½ cup shredded Monterey Jack or cheddar cheese
  • 2½ cups leftover nachos or frozen shredded hash browns

1. First, you need to preheat the oven to 350°F.

2. Now, you need to fully slice the sausage or remove it from the casings and cook in a skillet over medium heat. do this until the sausages have browned, but not burned. Next, transfer the cooked sausage to a large bowl, making sure to leave the rendered fat in the pan for the next steps.

3. Next, you need to add the onion and jalapeño to the pan and cook them together over medium-low heat until they are tender, or about 10 minutes. When the onion and jalapeno is done, it’s time to dump them into the bowl of sausage.

4. Now, you need to whisk together the eggs, cottage cheese, milk, cotija, and ½ cup Monterey Jack in a medium bowl, until everything is fully combined together.

5. Now, if you have them, toss the leftover nachos into the sausage mixture, mix it all up until the mixture is fully combined all together, and spread the whole shebang evenly in a greased 9 × 13-inch baking dish (if using hash browns, you will want to season this with 1 teaspoon salt before combining with the sausage mixture). Now, pour the egg and cheese mixture over it into the baking dish. Now, top with the remaining ½ cup Monterey Jack cheese.

6. Bake for 20 minutes, or until the casserole is golden brown and the eggs are set.
