Small Batch Cowboy Cookies Recipe

Have you ever had a cowboy cookie? It’s an oversized cookie packed full of oats, pecans, coconut, chocolate chips, and more. Here are the ingredients that you need in order to make these cowboy cookies!

  •  12 tablespoons salted butter, softened (1 ½ sticks)
  •  ¾ cup brown sugar
  •  ¾ cup sugar
  •  1 large egg plus 1 egg yolk
  •  1 teaspoon vanilla extract
  •  1 ½ cups all purpose flour
  •  1 ½ teaspoon baking powder
  •  1 ½ teaspoon baking soda
  •  1 ½ teaspoon ground cinnamon
  •  1 ½ cups semi sweet chocolate chips
  •  1 ½ cups old fashioned oats
  •  1 cup unsweetened shredded coconut
  •  1 cup pecans chopped

Here are the instructions to follow to complete this recipe:

  1. First, you need to heat the oven to 350 degrees F (177 degrees C).
  2. In a large mixing bowl, beat all of the butter together on a medium speed until smooth and creamy, which should take about 1 minute. Next, you need to add in all of the sugars and mix well for about 2 minutes, until the mixture has a nice, smooth consistency. You may need to scrape down the sides of the bowl if necessary to get all the batter incorporated.
  3. Now, you need to add in the egg and egg yolk to the mixture and beat well until the eggs are fully mixed into the batter.
  4. Now is the time to add the vanilla and beat it into the mixture until it disappears. If you are using clear vanilla, just beat it for about 15 seconds.
  5. Next, in a separate bowl, mix the flour, baking powder, baking soda and cinnamon together.
  6. Slowly add the flour mixture to the butter mixture and stir until just combined.
  7. Stir in the chocolate chips, oats, coconut, and pecans.
  8. Scoop out ¼ cup of the cookie dough and place on a parchment or silpat lined baking sheet. Space the cookies 3-inches apart.
  9. Bake in the oven for 15 to 18 minutes, until the edges are lightly browned. Remove from the oven and let cookies remain on baking sheet for 2 minutes. Transfer cookies to baking rack to continue cooling.
