Lots of people around the world enjoy popcorn during a movie, but it’s actually a good flavor for baking. So grab some popcorn kernels and get into the kitchen!
Here are the ingredients that you will need for the actual cupcakes:
1 bag plain popped microwave popcorn OR store bought popcorn 3 oz)
6 Tablespoons butter, melted
1 cup sugar
2 eggs
1/3 cup oil
1/2 cup milk
1 teaspoon vinegar
3/4 cup flour
1 1/4 teaspoon baking powder
1 teaspoon salt

In addition to the cupcakes, here are some additional frosting choices based on whatever you have in your pantry.
Strawberry Frosting
Ingredients
¾ cup (1 ½ sticks) unsalted butter, softened
1 ½ cups powdered sugar
¾ cup fresh strawberries, 5 to 6 berries depending on size
¼ teaspoon salt
Dark Chocolate Frosting
Ingredients
¾ cup (1 ½ sticks) unsalted butter, softened
2 ¼ cups powdered sugar
⅓ cup cocoa powder
3 tablespoons milk
¾ teaspoon vanilla extract
¼ teaspoon salt

Directions for the Cupcakes:
Heat oven to 350F. Line cupcake tins.
Grind popcorn down in a blender until pulverized. I’m talking flour like state. Popcorn “flour”. Measure 2 1/2 cups. Set aside.
Whisk butter and sugar. Add eggs and whisk to combine. Add oil and whisk to combine. Add milk and vinegar and whisk to combine. Add 2 1/2 cups popcorn “flour”, flour, baking powder and salt. Whisk to combine.
Divide batter evenly across 12 cupcake liners and bake 25-30 minutes until they rise and puff and bounce back to the touch. Cool completely before frosting!
Directions for Frosting:
STRAWBERRY FROSTING
Prep!
Cut off the tops of the strawberries with a butter knife, and then slice them up.
Mix!
Starting on a low speed use a hand mixer or a stand mixer with a paddle attachment to combine your butter and powdered sugar, 1 minute. Increase to a medium speed and whip until super smooth, about 3 minutes. Use your spatula to scrape the sides of your bowl well.
Add and fluff! Add strawberries and salt. Mix until combined and fluffy, about 1 minute.
CHOCOLATE FROSTING
Mix!
Starting on a low speed use a hand mixer or a stand mixer with a paddle attachment to combine your butter, powdered sugar, and cocoa powder, 1 minute. Increase to a medium speed and whip until super smooth, about 3 minutes. Use your spatula to scrape the sides of your bowl well.
Add and fluff! Add milk, vanilla and salt. Mix until combined and fluffy, about 1 minute.
