Peanut Butter Pudding Pops Recipe

The hot days of summer have arrived! Cool down from the hot temperatures with some cold desserts of flavorful popsicles. The best thing about popsicles is that they are simple to make and it be a variety of flavors and colors.

Here are the ingredients that you will need in order to make these pudding pops:

For the Popsicles:

  • 1 1/2 cup milk
  • 1 teaspoon vanilla
  • ½ cup sugar (all sugar subs welcome!)
  • 1 egg
  • 1 yolk
  • ½ cup peanut butter
  • 2 tablespoons cornstarch
  • ½ teaspoon salt

For Toppings:

  • ¼ cup mini chocolate chips
  • ¼ cup roasted, salted, crushed peanuts

Here are the directions that you will need to follow in order to make these pudding pops:

First, in a blender, fully blenf together all ingredients to make the popsicle until the consistency is smooth.

Then, transfer the mix to a medium-size saucepan and whisk over medium heat until the mixture comes to a boil. Then, turn heat to medium-low and continue cooking one minute more, until it’s thick.

Next, transfer hot mixture back to a clean blender and blend it again, ensuring mixture is incredibly smooth. Be carefully pouring a hot mixture into the blender, it will stay hot.

Next, divide mixture evenly between the 4-6 popsicle molds or small plastic or paper cups. Then insert popsicle sticks into the molds and freeze until completely solid, about 4 hours.

When you’re ready to dig in, peel the paper cup back or fill a bowl or baking dish with warm water. Submerge molds ¾ of the way in water for about 3o seconds, jiggling the pop by the stick to release. Now the pops are ready to enjoy!

If you want to get fancy, melt down some chocolate chips and drizzle over or dip the tops of your pop then sprinkle peanuts atop.

If you want to save them for later, simply individually wrap your pop in parchment paper or plastic wrap and freeze up to 2 weeks.
