Peanut Butter and Jelly Bread Recipe

Here are the ingredients that you need to compile in order to complete this recipe:

  • 1 heaping cup rolled oats about 100g
  • 1/4 cup all-purpose flour about 30g
  • 1/4 tsp baking soda
  • 1 pinch salt
  • 1/2 tsp cinnamon
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 tsp vanilla extract
  • 10 ounces strawberries fresh or frozen
  • 1/3 cup water
  • 1/4 cup chopped peanuts


Here are the instructions that you need to follow in order to complete this recipe:

  1. For the first step, you need to prepare the strawberries.
  2. In a pot on low heat, cook your strawberries in 1/3 cup water until they are soft. This process should take a few minutes. Then place the mixture into a blender and puree it, until the consistency is similar to strawberry jam.  Now, you need to put the mixture back on low heat for 15-30 minutes, stirring constantly until it thickens into a smooth jam.
  3. In a large, separate bowl, you need to fully whisk together all of the oat flour, all-purpose flour, baking soda, salt and cinnamon. Whisk together until the mixture is fully combined together.
  4. For the next step, in another bowl, you need to gently whisk together all of the eggs, vanilla, peanut butter and maple syrup. This should take several minutes and can be done in a stand mixer to speed up the mixing process. The mixture should be fully formed together due to the maple syrup.
  5. The next step is to fully fold in the dry ingredients until a thick batter forms. You can do this  slowly, adding a little batter at a time.
  6. Pour the batter into a parchment lined 8×8 inch baking sheet, top with the strawberry jam and chopped nuts.
  7. Bake at 350F for 20-25 minutes or until you can insert a toothpick and it comes out clean.
  8. This serves 12 and keeps for up to 10 days in the fridge!
