When you first think of olive oil, you probably think of cooking. However, some people probably also think of delicious baked goods. Olive oil is actually a rather popular flavor for pies, cookies, and even cakes in certain parts of the country. It’s also a point of controversy for people who have never tried it, but give it a taste and see for yourself.
Here are the ingredients that you need to gather in order to make this olive oil cookie recipe:
- 2/3 cup olive oil
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup coconut sugar
- 1/3 cup brown sugar
- 1 cup almond flour 110 grams
- 1/2 cup & 2 tbsp oat flour or 3/4 cup oats, blended into oat flour, 80 grams
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips

For the first step, you need to full preheat the oven to 350F while you prepare all of the ingredients.
In a large bowl, whisk together the all of the oil, eggs, vanilla and sugars until fully combined. They mixture will be smooth and you can do this by hand or by using a stand mixer, but each version of the process should take several minutes.
Next, in a separate bowl, whisk together all of the almond flour, oat flour, baking powder and salt until the mixture is well combined together.
Now, you want to gradually add the wet ingredients into the dry, and mix until no dry flour spots remain.
Fold in the chocolate chips into the batter. Don’t use a mixer of the chocolate chips will get destroyed.
In an 8×8′ parchment lined baking sheet, pour in the batter.
Bake at 350F for 15-20 minutes. These bars will puff up and then collapse slightly, and that’s a good thing!
Once out of the oven, let cool for 5 minutes before slicing and serving.
