- 1/2 cup packed light brown sugar
- 1/2 cup light corn syrup
- 3 tbsp Land O Lakes® Butter with Canola Oil or Regular Butter melted
- 3 eggs beaten and room temperature
- 2 tsp vanilla extract
- 2 tsp all-purpose flour
- pinch of salt
- 1 1/2 cups pecan halves
- 1 pie crust
Here are the instructions that you will need to follow in order to complete this recipe:
First, you need to preheat the oven to 375˚F. Then, in a medium-sized bowl, you need to fully whisk together both of the sugars until combined.
Nest, you need to melt the butter together with the canola oil for about twenty seconds in the microwave, adding ten seconds and stirring after each try to make sure the consistency is smooth. Now, you want to add this mixture into the bowl with the sugars. Next whisk in the corn syrup, the fully beaten eggs, and all of the vanilla until this mixture has a really smooth consistency. This may take a few minutes to achieve.
Now, you need to quickly whisk in all of the flour and a pinch of salt, until the mixture is smooth but somewhat thickened due to the addition of the dry ingredients. The mixture should still be mostly liquid, and not a bread dough consistency.
Now, you want to add the pecan halves and use a spatula to combine everything. Using a spatula means that the pecans won’t get crushed into the mixture.
Pour pecan filling into pie shell.
Bake for 15 minutes then lower temperature to 350˚F and bake 30-40 minutes or until the center of pie jiggles only slightly. If it shakes too much, leave it in the oven to bake longer. The pie should be almost stable.
