It’s Girl Scout cookies season! Instead of buying boxes of cookies, trying your hand at making them. Here are the ingredients you need to get in order to make these homemade cookies:
- 210 grams almond flour about 1 & 1/2 cups, packed
- 1 tsp baking powder
- 1 pinch of salt
- 3 tbsp melted vegan butter I like Country Crock Olive Oil butter, but you can also use regular butter here!
- 3 tbsp maple syrup
- 2-3 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 tsp lemon extract
- 1/4 cup powdered sugar for dusting

Here are the instructions that you need to follow to complete this recipe:

First, you need to gather all of the ingredients together. Then, preheat your oven to 350F.

The next step is to completely whisk together all of the almond flour, salt and baking powder. Make sure everything is completely mixed before moving on. You can sift the almond flour to make sure that there are no lumps as well.

Now, you need to directly add in all of the butter, maple syrup, lemon juice, lemon extract and lemon zest to the dry ingredients. Once all of those ingredients are added, make sure to fully mix the batter together until everything is incorporated. Mix until you form a dough (it will take a bit for the almond flour to fully absorb all the moisture, but it will come together I promise!)

If your dough needs more moisture, add an additional 1/2 tbsp of lemon juice at a time until you reach a cookie dough consistency.

Shape the dough into three balls, then use your hands to form them into a crescent moon shape (this is optional, but they come out looking just like Savannah Smiles!)

Place the cookies on a parchment lined baking sheet and bake at 350F for 20 minutes. The edges should get just slightly golden brown, but otherwise they won’t have too much color.

Dust generously with powdered sugar and serve!
