Pancakes are a staple breakfast food and they are also incredibly versatile from a flavor perspective. You can place fruits, chocolate chips, and more into the batter to add flavor or put them on top. One fun thing to add to pancakes is macaroni and cheese.
Here are the ingredients that you need in order to make macaroni and cheese pancakes:
- 1 cup all-purpose flour
- 2 tablespoons freeze-dried corn powder
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 cup whole milk
- 1 large egg
- 3 tablespoons grapeseed or other neutral oil
- 2 cups cheesy mac-’n-cheese
Here are the instructions that you need in order to make these macaroni and cheese pancakes:
First, you need to whisk together the flour, corn powder, sugar, baking powder, and salt in a medium bowl until everything is combined.
Next, in a separate small bowl, you need to whisk together the milk, egg, and oil until the consistency is smooth. Then, pour the liquid mixture into the flour mixture and whisk until your pancake batter is even and smooth. However, you should hand mix the batter while being careful not to overmix. You don’t want clumps of batter but an overmixed batter will be too tough.
Then, heat a griddle or nonstick skillet over medium heat. Pour 1⁄4 cup batter onto the griddle for each pancake (you should have room for two pancakes on the griddle) and top each pancake with 1⁄4 cup macaroni and cheese.
Next, use your fingers or a utensil to evenly spread the macaroni throughout the batter. Then, cook until the pancake batter has set on the bottom and browned (bubbles will begin to appear on the top and a few will burst). This usually takes about 1 to 2 minutes, but just watch for browning since griddles are different.
Then, flip each pancake carefully with a thin spatula and then cook the other side until golden brown. Also, probably another 1 to 2 minutes until golden brown.
Finally, remove the pancakes from the heat and repeat the process until all of the batter has been used. Serve the pancakes warm.
