Grapefruit Cookie Recipe

Have you ever wanted to bake but you only have a few random ingredients in your fridge? Sometimes a random piece of fruit is a good thing. It leads to unexpected fruit cookies. One of the best cookie flavors is anything citrus, as the flavor can be drawn from the fruit and the skin.

Here are the ingredients that you need to make this recipe:

  • 210 grams almond flour about 2 cups, loosely packed
  • 1 tsp baking powder
  • 1/16 tsp salt
  • 3 tbsp neutral oil like canola or vegetable oil
  • 3 tbsp agave nectar
  • 3 tbsp grapefruit zest
  • 3 tbsp grapefruit juice
  • 1/2 cup freeze-dried strawberries crushed
  • 2 tbsp cane sugar optional, for topping

Here are the instructions that you need to follow in order to make this recipe:

  1. First, you need to preheat the oven to 350F.
  2. Then, in a large bowl, you need to whisk together the almond flour, baking powder and salt.
  3. For the next step, you need to add in the oil, agave nectar, grapefruit zest, grapefruit juice and mix until a soft dough forms. Mix in the crushed freeze dried strawberries (or whatever  other fruit you have available) and mix until incorporated.
  4. In a separate small bowl, pour the sugar in for rolling. Then set it aside.
  5. Use a wet hand to form the dough into 8-10 equal sized balls. Roll each ball in the sugar (you can just coat the top, you don’t have to coat the whole cookie).
  6. Place each cookie ball on a parchment lined baking sheet and lightly press the tops down. These cookies won’t spread, so form them in the shape you want them to turn out!
  7. At this point, you want to fully bake the cookies for 10-12 minutes or until the color lightens from a slight pink color to a nice cream color.
  8. Serve them as soon as they come out of the oven! Share with friends and family.
