For the broccoli:
- 4 cups broccoli florets
- ⅓ cup all purpose flour
- 1/2 cup sparkling water
- ½ tsp baking powder
- 1 tsp salt
- 1 cup panko breadcrumbs

- 1/2 cup creamy tahini
- ¼ cup soy sauce
- 2 tbsp maple syrup
- 2 tbsp sambal oelek
- 2-3 tbsp lemon juice
- ~1/4 cup water to thin
- 1/4 cup scallions thinly sliced
- 2 tbsp chili oil

For the first step, you need to fully preheat your oven to 400F.
Then, on a cutting board, you need to completely chop up all of the broccoli into bite sized pieces.
The next step is to fully whisk together all of the flour, baking powder, and sparkling water until a slurry forms. The dry ingredients will mix well together, but the sparkling water will take some time to incorporate.
Now, you need to pour the batter over the broccoli and toss it until everything is lightly covered.
In a plate or bowl, add the breadcrumbs and salt. Lightly dip each piece of broccoli in the breadcrumbs to coat it.
Spread the broccoli out evenly on a parchment lined baking sheet and bake at 400F for 15 minutes. Give the pan a quick shake and then bake for another 15 minutes or until the broccoli is golden brown and crisp.
While the broccoli is baking, whisk together the tahini, soy sauce, maple syrup, sambal oelek and lemon juice. It will turn into a thick paste so gradually whisk in the water until it thins out into a smooth and creamy sauce.
When the broccoli is out of the oven, pour over a generous amount of the sauce and toss.
