Chocolate Mayonnaise Cake Recipe

In times of a pandemic, common grocery store items have been difficult to find. Also, a lot more people have been home, and quite a lot of them have been baking. Since common items like flour, eggs, butter, sugar have been harder to find, it’s been easier to use baking substitutes for things like cakes, which perform the same functions in a cake bake.

Mayonnaise is a good baking substitute because if you look at the label, its main ingredients are eggs and oil. If you’re not able to get your hands on eggs or oil, or don’t want to use them, mayonnaise is an excellent substitute and it’s incredibly shelf-stable.


Here are the ingredients that you will need in order to make this chocolate mayonnaise cake:

  • 2 eggs
  • 1 ¼ cup sugar
  • ¼ cup light brown
  • ⅔ cup mayonnaise
  • ½ cup milk
  • 2 teaspoons vanilla
  • 1 cup flour
  • ⅓ cup + 1 tablespoon cocoa powder
  • 1 ½ teaspoon baking powder
  • 1 ½ teaspoon salt

Here are the instructions that you need to follow in order to make this cake:

First, you need to heat your oven to 350F. Then, grease your baking pan or whatever pan you want to make your cake in whether it be a square baking sheet or even a skillet.

In a large bowl, you need to fully whisk together all of the eggs and sugars until the entire mixture is light and fluffy. Then, go ahead and add in the mayonnaise, milk and vanilla and whisk until the entire mixture is fully combined.

Next, whisk in all of the dry ingredients, like all of the flour, cocoa powder, baking powder and salt until the mixture is smooth again. Once the flour has been added, be careful not to over mix the batter, so overmixing can lead to the cake being too tough then it is baked.

Then, fill one round pan or baking sheet or divide evenly across pans and bake 30-35 minutes until a toothpick comes out clean when the cake is poked.
