Calabrian Chili Egg Sandwich Recipe

Here are the ingredients that you need to compile to make this sandwich:

  • 1-2 slices focaccia bread
  • 2 tbsp Calabrian chili paste, stored in oil and make sure you have a jar with you, we will use some of the excess oil
  • 1 large egg
  • 1/4 cup freshly grated parmesan
  • 1/4 cup basil leaves
  • salt & pepper to taste


Here are the instructions that you need to follow to complete this sandwich recipe:

  1. For the first step, you need to set a skillet to a medium heat.
  2. Dip a brush or spoon in your Calabrian chili paste, and get a bit of the oil (and only the oil). Brush each side of the focaccia with a liberal coating of the Calabrian chili oil.
  3. Griddle the bread in the skillet for 2-3 minutes on each side, or until each side is golden brown.
  4. Cut the bread down the middle to create two slices, this will serve as the top and bottom of the sandwich.
  5. Keep the skillet on medium heat, and either using the circular tools I’ve linked above, or just going freehand, sprinkle your parmesan on the skillet.
  6. Let the parmesan melt and crisp up for about 2-3 minutes, then remove from the skillet. It should be a parmesan “crisp” at this point.
  7. Then crack the egg and cook it over-easy in the skillet, about 2-3 minutes.
  8. Using a lid on your skillet will help with both the parmesan and the egg process.
  9. Rub the basil between your hands to activate the aroma and flavor, but no need to chop it up.
  10. To assemble the sandwich, first you need to place the egg on the bread, then add salt and pepper to taste, add a small spread of Calabrian chili paste, then the basil, and then the parmesan crisp.
  11. Top with the second slice of bread and serve! Enjoy!
