  • 1/2 cup salted roasted pumpkin seeds
  • 1 1/2 cups quinoa
  • 1/2 cup minced chives
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • Salt
  • Pepper


  1. Add the quinoa to a medium saucepan and then add at least 2 cups of water and then bring to a steady boil. Cover the saucepan and cook on a low heat until all the water has evaporated, which should be about fifteen minutes.
